You'll get both upon completing any given heist. Cash is used to purchase new unlocked items (weapons, masks, armor, etc.). Experience points are used only to level up, with each new level granting one skill point. This is no longer the case in the sequel, and both are recorded separately. In the original PayDay: The Heist, cash from your heist was directly your experience points.
